3-Phenylpropionic acid, also known as hydrogenated cinnamic acid, exists naturally in raspberries and rock roses. It precipitates as colorless needle-shaped crystals from ethanol and water, and as colorless prismatic crystals from ether. It has an elegant coumarin, vanilla bean-like aroma, as well as hyacinth and rose-like fragrance. It is easily soluble in hot water, alcohol, benzene, , ether, glacial acetic acid, and carbon dichloride. It is slightly soluble in cold water. It can evaporate with water vapor. 3-Phenylpropionic acid is used as a fixative for spices.
